berries, berries, berries
look what I did last night.
don't those berries look fantastic? and I can tell you the muffins taste sublime as well.
I ended up coming home from the holiday weekend with pounds of blueberries and cherries. I ate all the cherries and bought some raspberries from the market this week. my dilemma was what to do with all the berries before they went bad. I had already decided not to eat them all in a few days times. not good on the body I've found!
so, I did some research online and found this muffin recipe. and then I went and forgot to get the lemons at the store tonight so I pinch hit and used lemon extract instead. not knowing how it would taste with the zest, I can't say if mine is the same but it tastes good for sure. I did half the batter with raspberries and half with blueberries. I'm in love with them both. the recipe said it made 12 muffins but mine made 18 and I still had some batter left to made eight mini muffins. those are long gone already but the regular muffins are prepped for breakfast tomorrow and stored for longevity so I can eat them for as long as I can!
the remainder of the berries were flash frozen on a cookie sheet and stored in tupperware in the freezer for ease. now I can pull them out to make a smoothie (I just got a new-to-me blender!) or these scones or this tart.
yea for summer and fresh fruit. thank you to marilyn for the blueberries. thank you to hayton farms for the raspberries.

Holy cow those muffins sound delicious! I love how you took that picture of the berries from that angle. I'm bummed I didn't take blueberries with me. Maybe I can get some when I'm in TC this next week. I will let you know.
My mouth watered just reading about your yummy muffins! Would you please post the recipe so the rest of your readers can make and enjoy them as well? Couldn't you freeze the muffins individually and pull one out for breakfast, warming it up in the microwave? Keep on baking new food items so you can share them. MOM
